Homemade Paneer Recipe













 Ingredients:-
2 liter/4 big cups condensed milk
1/2 tsp lemon juice or
1/10 tsp vinegar
How to make Paneer at home:-
·        Boil the milk in a big vessel.
·        While boiling add either lemon juice or vinegar.
·        Stir continue and mix very well.
·        After few minutes, the milk will start curdling, at this moment turn the gas off.
·        Keep the milk aside for 10-15 minutes.
·        Take a clean muslin cloth and pour the milk on it.
·        Tie a tight knot to the cloth and squeeze out the whole water.
·        After the water will fully get drained, the milk will form in a block of paneer.
·        Keep the cloth (in which paneer is made) under any heavy weight.
·        Your healthy homemade paneer is ready to make several other dishes.

Sprouts Chutney Recipe

Sprouts Chutney


Ingredients:-

Green gram sprouts - 1 cup
Garlic - 2 cloves 
Tamarind - a lemon sized ball
Ginger - a small piece
Onion - 1
Urad dal - 3 tsp
Coriander seeds - 1 tsp
Red chili - 4
Curry leaves - a few
Salt - as needed
Oil - as needed


How to make sprouts chutney:-

Peel skin of onion, ginger, garlic, cut finely.
Heat oil in a frying pan.
Add urad dal, coriander seeds, red chili, curry leaves, fry and set aside.
Add garlic, onion, green gram sprouts, fry and set aside.
Grind fried items with tamarind, ginger, salt coarsely.
Enjoy this tangy chutney with fried snacks.

Maharashtrian Aamti Recipe



Maharashtrian Aamti












Ingredients:-
1 cup(s) split red gram (tuvar dal)
4  cups water
½  teaspoon(s) turmeric powder
1  teaspoon(s) red chili powder
1  teaspoon(s) tamarind paste
1  tablespoon(s) jaggery
1  teaspoon(s) ghee (clarified butter)
1  teaspoon(s) each of mustard and cumin seeds
3"  piece ginger finely chopped
4  small green chilies finely chopped
1  teaspoon(s) hot spice mix (garam masala)
asafetida and salt to taste
finely chopped coriander leaves



How to make Maharashtrian Aamti:-

  • Heat the water in a heavy bottomed vessel and drop the split red gram into it.
  • Bring it to a boil. As it boils, add the tamarind paste, jaggery, red chili powder, turmeric powder and salt.
  • Cook on medium / low heat for 12 minutes or till the gram is soft but not mashed. Keep aside.
  • Heat the ghee (clarified butter) in a pan till very hot. Add the mustard seeds and let them splutter.
  • Now, add the cumin seeds and the asafetida. Fry on medium heat for 1 minute(s) or till the cumin seeds are a shade darker.
  • Add this to the cooked gram mixture.
  • Add the chopped coriander leaves, green chilies and ginger.
  • Cook covered on medium / low heat for 4 minutes. 
  • Garnish with the garam masala and keep covered for some time before serving.
  • Serve with rice or roti…

Veg. Hot Pot Recipe



Veg. Hot Pot


Ingredients:-
1 cup boiled macaroni or noodles
1 large onion, grated
2 tomatoes, grated
2 potatoes, boiled and sliced thin or grated
1 capsicum, cut into thin rounds
1 spring onion, finely chopped
1/2 tsp ginger, grated
1 tsp garlic, grated
1 tsp Red Chili crush or powder
1 tsp Sugar
1 tbsp Corn flour
Salt to taste
1 tbsp grated cheese
1 tbsp coriander, chopped
2 tbsp Butter

How to make veg. hot pot:-

  • Heat butter. Add ginger, garlic, and onion. Stir fry for a minute.
  • Add vegetables except tomato and potatoes. Fry for 2 more minutes.
  • Mix corn flour in 1 cup water to a smooth paste.
  • Add chili, salt, sugar and tomato.
  • Mix well and pour into the vegetables, stirring as you pour.
  • Stir and bring to a boil. Simmer for 2-3 minutes till the milkiness of corn flour goes.
  • Boil till thick but of pouring consistency.
  • Mix the cheese in the potato (if grated).
  • Grease a casserole or oven-proof dish, and place the macaroni or noodles at the bottom.
  • Pour the veg. sauce on top.
  • Cover with slices of potato or sprinkle if grated.
  • Sprinkle the coriander all over.
  • Bake in a hot oven (300 degree C) for 15 minutes or till potato cheese becomes golden brown.
  • To be eaten hot with warm buns or garlic dinner rolls.
