Sweet corn soup


Sweet corn soup
Recipe
 
Ingredients:-
100 gms - cauliflower (cut into very small florets)
50 gms - cabbage (cut into fine strips)
125 gms - sweet corn (cream style)
5 - French beans (finely chopped)
1 - small carrot (finely chopped)
2 tbsp - corn flour (dissolved in 1.5 cup water)
4 cups - vegetable stock
1.5 tbsp - sugar
1.5 tsp - ajinomoto
vinegar
soya sauce
chili sauce
white pepper to taste
salt to taste

How to make sweet corn soup:-
·         Par boils the vegetables.
·         Drain and keep aside.
·         In a heavy bottomed vessel bring the vegetable stock to boil.
·         Add the sweet corn and mix well.
·         Add salt, pepper, sugar and ajinomoto.
·         Bring to boil.
·         Gradually add the dissolved corn flour and boil stirring continuously.
·         Boil for few seconds.
·         Add the vegetables and cook for a minute.
·         Remove from gas.
·         Add vinegar and the sauces.
·         Serve hot.

Sarso ka Saag


Sarso ka Saag Recipe
 

Ingredients:-
1 big bunch - sarson leaves (mustard leaves)
1 bunch - spinach leaves
1/2 bunch - bathua leaves (chenopodium album/vastukah/paruppu keerai)
1/4 bunch - green methi (optional)
2 onions, chopped
2 tomatoes, chopped
5 - green chillies, crushed
4-5 - garlic pods, finely chopped
1/2 inch - ginger piece crushed
2 tsp makki flour (cornmeal)
Salt to taste
 

How to make sarso ka saag:-
·         Roughly chop the cleaned, washed leaves of sarson, spinach (don`t remove spinach stalks) and bathua.
·         Pressure cook for 1 hour.
·         Cool and coarsely puree in a food processor.
·         Add makki ka atta, green chillies and paste of ginger to this sag.
·         Add salt.
·         Cook for 10-15 minutes.
·         In a pan, heat 1 tsp butter and oil.
·         Add chopped garlic and onion.
·         Saute till onions become translucent.
·         Add chopped tomato and cook till butter separates.
·         Add sag and cook for 5 minutes.
·         It is ready to eat.
·         Serve piping hot with makki di roti.

Dal Fry


Dal Fry Recipe
 
Ingredients:-
1/4 cup - moong dal
1/4 cup - channa dal
1/4 cup - tur dal
2 - small onion
1 - large tomato
1 tsp. each - chopped ginger and garlic
1/4 tsp. each - mustard seeds and methi seeds
Garam masala, chili powder and salt to taste
4 tsp. ghee

 How to make Dal fry:-
·         Wash the dal and soak for 15 mins.

·         Meanwhile, cut onions and tomatoes.

·         Half cook the dals in a pressure cooker.

·         Heat 3 tsp. ghee in a pan, add onions, then tomatoes and cook.

·         Once they are cooked, add garam masala, chili powder and salt.

·         Open the pressure cooker, add the cooked tomato and onion mixture and let the dal boil for 10 to 15 min on a low flame.

·         Heat one tsp. ghee, add mustard and methi seeds and saute and then add chopped ginger and garlic and saute.

·         Then add chopped coriander leaves.

·         Add this mixture to the dal just before serving and boil for 5 mins.

·         Garnish with coriander leaves.

·         Serve with roti, naan or paratha.

Paneer Pinwheels


Paneer Pinwheels
Recipe
 
Ingredients:-
Paneer - 1 cup ( grated or mashed)
Fresh Bread - 1/2 loaf (large sized pieces)
Green Chillies - 5 (finely chopped)
Ginger - 1" piece (grated)
Salt - to taste
Carrot - 1 (grated)
Butter - 1 tbsp
 
How to make paneer pinwheels:-
·         Trim the edges of all bread slices and dry grind edges, to crumbs in a mixer.

·         Lightly mix together paneer, chili, ginger, salt and carrot.

·         Press each slice thin with a rolling pin.

·         Spread some paneer filling over the slice. Roll tightly.

·         Secure with a toothpick if required. Repeat for all slices.

·         Tightly rolls in a wet muslin cloth and refrigerate for 30 minutes.

·         Remove, brush with butter and roll in the crumbs.

·         Grill till golden, turning once if required. (Keep the oven preheated and bake at 300o C.), or deep fry if desired, instead of baking.

·         Cut into 1" thick wheels and serve hot with sauce and chutney.

Kalmi Vada


Kalmi Vada Recipe


Ingredients:-
1/2 cup Chana Dal
1/4 cup Onions, chopped
1/2 tsp. Green Chili Paste
1/2 tsp. Ginger Paste
1/2 tsp. Red Chili Powder
5 to 6 Cloves-Garlic
1/2 tsp. Aniseeds
1 tsp. Coriander Seeds, roasted and powdered
Salt to taste
Oil (as required)

 How to make Kalmi vada:-
·         Soak the chana dal overnight in water.

·         Blend the soaked dal with garlic, ginger and green chili into a fine paste.

·         Add to this chili powder, onions, coriander powder, aniseeds and salt. Mix properly.

·         Take small portion of the paste and give it the shape of a vada.

·         Heat oil in a pan and fry the vada till it turns light brown.

·         Now, cut this vada into two equal halves and again deep fry till it turns brown.

·         Serve Kalmi Vadas with chutney or ketchup!!
