Milk Cake


Milk Cake Recipe

Ingredients:-

6 cups of whole milk

Approximately 3 tablespoon lemon juice

1/2 cup sugar

1/8 teaspoon crushed cardamom

2 tablespoons ghee or unsalted butter

Approximately 1 table sliced pistachios for garnish
 

How to make milk cake:-

·         Grease a 6-inch plate and set aside.

·         In a large, wide and heavy saucepan bring the milk to a boil over medium high heat.

·          And let it boil for 2-3 minutes.

·         Add lemon juice to the milk, it will begin to curdle. Use minimum amount of lemon juice to just start the curdling process and prevent the whey (milky water) from completely separating immediately.

·         Boil for 5 minutes and remove approx. 1 ½ cups of the whey. This will help reduce the tartness from the cake.

·         Continue to cook and stir occasionally until the milk is a grainy consistency and the whey is evaporated. This will take an additional 15-20 minutes.

·         Add sugar and cardamom and keep stirring until the mixture starts coming together. This should take approximately 5 minutes.

·         Lower the heat to medium and cook for another 4-5 minutes until mixture changes to a slightly golden brown color.

·         Transfer mixture to the greased plate and press firmly into a square shape, approximately 1 inch high. As an option, sprinkle sliced pistachios on top.

·         Let sit for at least an hour before slicing into individual pieces.

Chocolate Brownie


Chocolate Brownie Recipe

Ingredients:-

1/2  cup vegetable oil

1/2  cup cocoa powder

1 cup sugar

1/2 cup silken tofu

2 teaspoons vanilla extract

1/2 cup all purpose flour (maida, plain flour)

1/4 teaspoon salt

1/2 teaspoon baking soda

1/4 cup chopped walnuts

 
How to make chocolate brownie:-

·         Preheat the oven to 350 degree F/180c. Grease the 8×8-baking pan.

·         Mix the tofu until it is smooth.

·         Mix flour, salt and baking soda, set aside.

·         In a mixing bowl stir together the oil, cocoa powder and sugar until its well blended. Then stir in the mixed tofu and vanilla.

·         Add the flour mix and once its well-mixed, then fold-in walnuts.

·         Pour the mixture into a greased baking pan evenly and bake it for 25 to 30 minutes. Place the pan on the middle oven tray.

·         Once the brownies are baked, let them cool to room temperature before cutting the brownies into squares. Cutting too early will make the brownies to crumble.

·         Serve with vanilla ice-cream scoop.

Dabeli


Dabeli Recipe

Ingredients:-

15 Small burger buns

1 Onion, chopped

1/2 Cup fresh coriander, chopped

1/2 Cup sev

1/2 Cup peanuts, roasted

2 tsp Fresh garlic chutney

1/2 Cup fresh pomegranates

6 tbsp Khajur imli ki chutney

Butter or oil, for cooking


For Dabeli Masala:

1 Red chili

1/2 Inch cinnamon sticks

1 tsp Coriander seeds

1/4 tsp Cumin seeds

2 Cloves

 
For The Filling:

1 Cup boiled and mashed potatoes

1 Pinch asafetida powder

2 tbsp Khajur imli ki chutney

1/2 tsp Cumin seeds

1/2 Cup water

2 tbsp Oil

Salt to taste

 
How to make Dabeli:-

·         Roast the masala ingredients in a pan for about 2 to 3 minutes.

·         Grind them to make a fine powder in a blender, set aside.

·         For the filling, heat the oil in a pan and add the cumin seeds to it, until they crackle.

·         Add the asafoetida, dabeli masala, potato, water and salt, mix well.

·         Remove them from the heat, combine khajur imli ki chutney and mix well.

·         Divide it into 15 parts, set aside.

·         Cut the burger buns into halves and cook them in a pan using a little butter.

·         Now put a portion of the filling on the lower half of each bun.

·         Top it with the chopped onion, sev, coriander, pomegranate, peanuts, garlic chutney and khajur imli ki chutney.

·         Sandwich it with the top halves of the burger buns and serve it.

Mathri


Mathri Recipe


Ingredients:-
2 cups All Purpose flour (plain flour or maida)
1/2  cup sooji (semolina flour)
1 teaspoon salt
1/2 teaspoon ajwain
4 tablespoons oil
3/4 cup lukewarm water (use as needed)
Oil to fry 

How to make mathri:-
·         Mix all the ingredients except the water.
·         Add the water little at a time, kneading into a firm dough.
·         Cover the dough and set aside for 15 minutes or more. Now, divide the dough into about 40 equal parts.
·         Take each part of the dough and make a flat ball shape. Roll them into 2 inch circles.
·         Prick each mathri with a fork in 5 to 6 places, so the mathris do not puff when frying.
·         Heat the oil in a frying pan on medium heat.
·         The frying pan should have at least 1 1/2 inch of oil. To check if the oil is ready, put a small piece of dough in the oil. The dough should make the oil sizzle and come up slowly.
·         Fry a few mathris at a time. Make sure to place just enough mathris to cover the frying oil.
·         Fry the mathris until both sides are a light golden-brown.
