Vegetable Samosas


Vegetable Samosas
Recipe
 

Ingredients:-
1 1/2 cup Refined wheat flour 1 1/2 cup
3 medium potatoes
1/2 cup Garden Peas
1 cup Shredded cabbage
1 cup Chopped Onion
2 tbs Chopped Green chili
11/2 tsp ginger Paste
1/4 cup mint leaves
1/2 cup coriander leaves (dhaniya)
3 tsp vegetable oil
salt as per taste 
 

How to make vegetable samosa:-

·         Boil potatoes, peel and slightly mash. Boil Peas and cabbage and keep aside.

·         In a non stick pan, heat oil and add chopped onions until light brown.

·         Add ginger paste, coriander, mint, green chilli and fry for one minute.

·         Now, add salt and the boiled Peas, cabbage and mashed potatoes and Stir well.

·         Let it cook for a minute, remove from heat and keep aside.

·         Mix flour and salt. Melt 3 tablespoons of butter and add to the flour and salt mixture and mix well.

·         Add a few tablespoons of water at a time, to the mixture and make into dough. The consistency of the dough is similar to that of chapati.

·         Divide the dough into walnut sized balls and flatten each ball to form a circle.

·         The size of each circle is roughly six inches in diameter.

·         Divide the circle into two (half circles).

·         Wet the edges of each half circle. Place sufficient amount of stuffing in the middle of the half circle and fold the corners in, so that, the end result looks like a stuffed triangle.

·         Pinch the edges lightly, they should seal easily because they are wet.

·         In a wide skillet, heat oil over medium-low. When oil is hot, deep fry the stuffed samosas until they become pale brown in colour.

·         Remove from skillet and keep aside. After frying all the samosas to a pale brown colour, re-fry them, over medium heat, once again to a deep brown colour.

Chinese Bhel


Chinese Bhel Recipe

 

Ingredients:-
250 gm wheat noodles
cooking oil to deep fry the noodles
1/4 cup grated carrot
1/4 cup cabbage sliced very fine
1/4 cup very thinly sliced capsicum
1/4 cup bean sprouts
1/4 cup chopped spring onions
2 tbsp fresh chopped coriander
1/4 cup salted, roasted peanuts
1/2 cup chinese schewan sauce
1 tsp vinegar
2 tbsp tomato ketchup
2 tsp chili sauce
Salt to taste

 How to make chinese bhel:-
·         Heat a deep pot of water till boiling. Add a tbsp of salt to it and then add the noodles. Boil till almost done and remove from the water. Drain well and lay out on a platter to cool and dry.
·         Heat the cooking oil to deep fry the noodles. Deep fry till pale golden and crispy. Remove from oil, drain and keep aside on paper towels till cool.
·         Take a large mixing bowl and crush the fried noodles in it coarsely. Add all the other ingredients and stir well.
·         Serve immediately.

Maharashtrian Thalipeeth


 

Maharashtrian Thalipeeth
Recipe
 

Ingredients:-
Besan - 1 cup
Jowar flour - 1 cup
Rice flour - 1 cup
Bajra flour - 1/2 cup
Wheat flour - 1/2 cup
Chilli powder, Corriander powder, Cumin powder, Garam masala powder - 1 tbsp each
Turmeric - 1 tsp
Grated Jaggery - 2 tblsp
Chopped Onion - 1/2 cup
Chopped Coriander - 1/4 cup
Garlic - 2 tbsp (finely chopped)
Salt - to taste

 
How to make thalipeeth:- 

 Mix all the above ingredients and knead with enough water into a soft dough.

·          Cover and let the dough rest for about 10 minutes. After that make small balls of the dough.

·          Pat each ball with fingers on a wet muslin cloth or a greased plastic cover to roll out the thalipeeth.

·         In the meantime heat up the tawa.

·         Drop 2-3 drops of oil on the thalipeeth and put it on the hot tawa. Put the rolled out thalipeeth such that the top touches the tawa.

·         Carefully remove the cloth/plastic cover from the thalipeeth.

·          Let it cook well on both sides.

·         Serve hot with garlic chutney or yoghurt or mango pickle.
