Mango Rice Recipe



Mango Rice

















Ingredients:-
Raw mango - 1
Cooked rice - 2 cups
Jaggery - 1 tablespoon
Mustard seeds - 1/2 teaspoon
Cumin seeds - 1 teaspoon
Salt - 1 tea spoon or to taste
Fresh grated Coconut or desiccated coconut - 1/2 cup
Red chilies - 2-3 or according to taste

Seasoning:-
Oil - 2 tablespoons
Mustard seeds - 1/2 teaspoon
Cumin seeds - 1/2 teaspoon
Asafetida - 1/4 teaspoon
Turmeric powder - 1/2 teaspoon
Curry leaves - 7-8

How to make Mango Rice:-

  • Grate raw mango and fresh coconut. 
  •  Grind together mango, coconut, red chilies, mustard seeds, cumin seeds to a fine paste. Add a little water if necessary but not too much.
  • Heat oil in a pan. When it is hot, add mustard seeds, cumin seeds. Add the mango paste. Add curry leaves. Stir and cook For 5 minutes.
  • Add jaggery and salt. Stir once in a while. Cook till oil separates and the paste thicken.
  • Remove from fire and cool a little.
  • Add cooked rice. Mix the rice well with the cooked mango mixture.
  • Serve hot.

Methi Vada Recipe

Methi Vada















 Ingredients:-
1 cup urad dal
1 cup chana dal
½ cup moong dal
½ cup rice
Salt to taste
2 cup fenugreek leaves (finely chopped)
1 tsp garlic cloves (finely chopped)
Oil for frying
A pinch of asafetida
½ tsp turmeric powder
½ tsp red chili powder
2 tbsp green chili paste
2 tbsp lemon juice
2 onions (finely chopped)
1 tbsp Coriander seeds
2 tbsp coriander leaves (finely chopped)
Water according to requirement

 How to make methi vada:-
·          Soak all dal and rice for 4-5 hour.
·         Drain water from it.
·         Add water and salt in it.
·         Grind it coarsely in a mixture jar. Paste should be thick.
·         Keep mixture for 4 hour at room temperature.
·         Mix chili paste, asafetida, red chili powder, turmeric powder, coriander seeds, methi, garlic, onions and coriander leaves.
·         Also add lemon juice in it.
·         Heat oil in a pan at medium flame.
·         Fry Vada till it becomes crispy and brown in color.
·         Hot serve with mint chutney or tomato ketchup.

Marble Cake Recipe

Ingredients:-
2 cups all-purpose flour (maida)
1 cup butter / margarine
1-1/2 cup sugar
2 eggs
1 cup milk
70 gm cocoa powder
2 tsp vanilla extract
1/2 tsp salt 

How to make marble cake:-

·         Sift the flour, salt and baking powder in a big bowl.

·         Cream together the butter, vanilla and sugar.

·         Beat the eggs and add into it.

·         Beat the mixture till turns smooth and sugar gets blended well.

·         Now add the sifted flour and milk alternately in the mixture.

·         Mix well till the batter is smooth.

·         Divide the prepared batter into 2 parts.

·         In one portion add cocoa powder very well.

·         Grease and line one 8-9 inch baking tin.

·         Pour 1 layer in the tin and then the second and continue this process alternatively.

·         Bake in preheated oven at 200C for 15-17 minutes and then reduce the temperature and bake for another 10 minutes or until the cake gets golden on top.

·         Cool the cake at a top wire rack of the oven for few minutes and then invert on a dish.

·         Enjoy it with hot cup of tea.

Mexican Grilled Sandwich Recipe

Ingredients:-
Bread slices - 12
Amul butter - 3 tbsp
Onion – 1 (chopped)
Tomato – 1 (chopped)
Potato – 1 (boiled & chopped)
Green chilies – 1or 2 (chopped finely)
Boiled corn - 1 cup
Grated cheese - 1/2 cup
Salt to taste
Pepper to taste
Tomato sauce - 2 tbsp
Chili sauce - 2 tbsp
White sauce - 1 cup

 For white sauce:
 Milk- 1 cup
Amul butter - 1 tbsp
 

How to make a Mexican grilled sandwich:-

·         For making white sauce:-

·         Heat 1 tbsp butter in a pan. Add Maida and fry lightly.

·         Add milk and stir till it becomes like a sauce.

·         For preparing the sandwiches:-

·         Mix together the chopped onions, tomatoes, potatoes, green chilies, boiled corn, half cheese, salt and pepper.

·         Lightly toast the bread slices and apply butter on one side only.

·         Spread the white sauce and vegetable mixture on the buttered side.

·         Put the remaining grated cheese on top.

·         Sprinkle tomatoes and chili sauce and bake at 350 degree F or 160 degree C for ten minutes or till cheese melts.

·         Serve with wafers and mint chutney.
