Modak


Modak Recipe

Ingredients:-

For the filling
2 Cup shredded fresh coconut
1/2 Cup mixture of unsalted pistachios and unsalted cashews
1/2 Pinch of cardamom powder
1/2 Cup milk
1 Cup jaggery or sugar
For the outer cover
1 Cup rice flour
1 tsp Ghee
1 Cup water
1/2 tsp Salt
 
How to make modak:-

·         To prepare the filling, combine coconut, milk and jaggery or sugar, mix well.

·         Cook it over medium flame, stir continuously till they are mixed properly.

·         Add cashews and pistachios and cook for about one minute. Now add cardamom powder.

·         Let it cool, keep aside and bring water to a boil.

·         Now add flour, ghee and salt, stir quickly so as to remove all lumps.

·         Cover with a lid for some time and cook, remove the lid and keep stirring.

·         Now remove the pan from the heat and transfer all the mixture on a flat plate.

·         Knead it to make soft dough. It should be neither too sticky nor too dry.

·         Grease the palms of your hands properly and make a ball from the dough.

·         Flatten the dough to make a cup shape. Now, put 3/4 tsp coconut filling into this cup.

·         Dip thumb and index finger in the oil and make 5-6 small pinches on the outside edges of the cup.

·         Bring them together on top and join to shape a peak.

·         Put modak on a pre greased plate.

Fafda


Fafda Recipe

Ingredients:-
2 cups Besan
1/4 tsp Baking Soda
1/4 tsp Ajwain
1/4 tsp Turmeric Powder
1 tbsp Oil
1/2 tsp Salt 

How to make fafda:-
·         Mix the besan, soda, ajwain, haldi, oil (1 tbsp) and salt together in a bowl. Add water to it and knead into soft dough.

·         Take a portion of the dough and place it on a greased surface.

·         With base of your palm, flatten the dough and then, cut out 2" strips from it.

·         Fry these strips over medium heat until crisp. Let them cool.

·          Fafda is ready to eat. Serve with spicy chutney.

Coconut Barfi


Coconut Barfi Recipe

Ingredients:-

225 gms Khoya
225 gms coconut (dry and ground)
1 tsp cardamom seeds (ground)
1 tbsp ghee
2 1/2 cups sugar
2 cups water
1/2 tsp almonds (grated)
1/2 tsp pistachios (grated)
 

How to make coconut barfi:-

·     Mix khoya and coconut and fry them lightly with ghee on a low heat.
·     Add cardamom and mix well.
·     Prepare one-string syrup by dissolving sugar in the water.
·     Now stir the coconut mixture into the syrup.
·     Grease the plate and spread the grated nuts on it.
·     Spread the prepared evenly over the plate and allow it to cool.
·     Now with the knife, cut it into desired shapes.
·     Turn them over so that nuts covered part appears on the top.
·     Coconut ki barfi is ready to be served.

Shahi Paneer


Shahi Paneer Recipe

 
Ingredients:- 
Paneer (cubed) – 2 cups (homemade/store bought fresh/fried)
Cashew/ Almond – 1 cup
Onion – 1 (finely chopped)
Ginger garlic green chili paste - 2 tbsp
Coriander Powder – 2 tsp
Cumin powder - 1 tsp
Garam Masala – 1 tsp
Pepper powder (preferably white pepper) - 2 tsp (or to taste)
Black Cumin seeds (Shahi Jeera) - 1 tsp
Yogurt - 1 cup
Milk- 1 cup
Salt – to taste
Sugar - a pinch
Oil – 2 tbsp
Coriander – for garnish

 

How to make shahi paneer:-

·         Soak the almonds/cashews in milk for 10-15 min and grind it in a blender to form a smooth paste.
·         Heat oil in a pan, splutter cumin seeds and fry the onions until they start to sweat.
·          Add ginger-garlic-green chili paste and cook till the raw smell vanishes.
·          Add the yogurt along with cumin powder, coriander powder and garam masala to this and cook for a minute.
·          Next add the cashew and milk paste. Add water as needed and bring it to a boil. (Add more water than needed as the gravy thickens considerably.)
·         Add salt, sugar and pepper powder to the gravy and let it simmer for 15-20 minutes for the cashew/almond to be cooked nicely.
·         Add the paneer cubes to the gravy and cook for another 5 minutes.
·         Garnish with fresh coriander or with tossed cashews/almonds and serve with pulav/naan.

Bread Rasmalai


Bread Rasmalai Recipe

Ingredients:-        

10 - 12 bread pieces
Cup chopped almonds      
1 cup milk     

Tsp finely chopped pistachios 
1 tsp saffron   

2 - 2 tbsp condensed milk 

For garnish:-        

Silver leaf
Chopped almonds
 

How to make bread Rasmalai:-       

·         Mix bread, almonds and milk in a mixer to prepare a mixture.            

·         Now, make tikkis from the mixture, fill them with pistachios and again seal them.   

·         After this, heat a pan, add saffron, milk and condensed milk in it to prepare a gravy.           

·         Next, pour the prepared gravy on tikkis and keep them in fridge for 30-45 mins.      

·         Garnish the prepared rasamalai with silver leaf and almonds. Your bread rasmalai is ready for serving.

Golden Shake


Golden Shake Recipe

Ingredients:-

1 cup pineapple juice (annanas ka ras)
1 cup orange juice (santre ka ras)
2 cup milk (doodh)
1 cup fresh cream
6 tbsp sugar
crushed ice

 
How to make golden shake :-

·     Mix sugar in pineapple and orange juice and mix well.
·     Then mix milk in it.
·     Put some crushed ice in glass.
·     Fill shake in the glass and pour some cream on the top.
·     Serve yummy chilled shake.
