Amritsari Paneer


Amritsari Paneer Recipe

 
Ingredients:-

500 gms. firm paneer
2 onions sliced into thin rings
1 tsp. ginger grated
1 tsp. garlic crushed fine
1/2 tbsp. coriander finely chopped
1 tsp. ajwain seeds
3/4 cup gram flour
1 tsp. red chilli powder
1/2 tsp. turmeric powder
1/2 tsp. tandoori masala
1/2 tsp. punjabi garam masala
1/2 tsp. sugar
1 anardhana powder
salt to taste
2 tbsp. oil

 
How to make amritsari paneer:-

·         Cut paneer into 1x1x1 cubes.

·         Make a thick mixture of flour, salt, ginger, garlic, turmeric, ajwain, garam & tandoori masalas.

·         Sprinkle 2-3 tbsp. water if necessary. Add 1/2 tbsp. oil, mix well.

·         Use 2 tbsp. mixture to marinate onions, and rest to marinate paneer cubes.

·         Marinate paneer for 10 minutes.

·          Fry pieces and mesh till crisp and brown.

·         Heat remaining oil, add onions, saute till light brown.

·         Add marinate paste, stir well and cook.

·         When dry add fried paneer, chilli, anardhana powder, sugar, salt.

·          Toss well and garnish with coriander.

Green Tikkis




Green Tikkis Recipe

Ingredients:-
1 cup sarson saag (mustard leaves, chopped finely)
1 cup spinach leaves (chopped)
1 pod garlic
1/2 inch piece ginger
2 tbsp chopped mint leaves
2 cups breadcrumbs
3 tbsps besan
2 green chillies, finely chopped
Oil for deep frying


How to make green tikkis:-
·         Boil the spinach and mustard leaves with the ginger and garlic till soft.
·         Drain out the excess water and grind to a paste.
·         Now, mix in the chopped mint and green chillies and the bread crumbs and also the besan.
·         Shape into round tikkis and fry in hot till crispy and golden brown.
·         Serve with sauce or chutney.

Hyderabadi Veg. Biryani


Hyderabadi Veg. Biryani
Recipe

 
Ingredients:-

350 gms Basmati Rice
200 gms Potatoes
200 gms Carrots
100 gms Onions
4 Green Chilies
30 gms Ginger
20 gms Garlic
1/2 tsp Turmeric Powder
1 tsp Red Chili Powder
1 cup Curd
1 tsp Saffron
2 tbsp Milk
1/3 cup Mint ( Pudina leaves )
1/3 cup Coriander Leaves
4 tsp Rose Water
50 gms Cashew nuts
50 gms Almonds
25 gms Raisins
120 gms Ghee
Salt To taste

 How to make hyderabad biryani :-
·     Wash and soak the basmati rice for half an hour. Drain the water. Put the rice, some more water and add half the whole garam masala and salt in a pan.
·     Bring the rice to a boil and cook until the rice is done. Drain and keep aside.
·     Dice the peeled potatoes and carrots and wash them. Slice the onions and green chilies.
·     Peel ginger and garlic and chop finely. Chop the coriander and mint leaves.
·     Soak the almonds in water for half an hour and keep aside.
·     Beat the curd in a bowl and divide into two equal portions.
·     Dissolve saffron in warm milk and add it to one portion of the curd mixture.
·     Heat ghee, add the remaining garam masala and saute over medium heat until it begins to crackle.
·     Add onions until golden brown. Then add green chilies, ginger, garlic and stir for a minute.
·     Add turmeric and chili powder, saute for half a minute add the chopped vegetables and stir for a minute.
·     Add the portion of plain curd, stir, add 2/3 cup water, and bring to a boil, then simmer until the vegetables are cooked.
·     Add the dry fruits and nuts when the vegetables are done.
·     In the handi with the cooked vegetables, sprinkle little saffron curd, mint and coriander.
·     Then spread half the rice and again sprinkle the remaining saffron-curd, mint and coriander and top it with the remaining rice.
·     Place a moist cloth on top, cover the lid tightly so that it gets sealed.
·     Put the handi on Dum in a pre-heated oven for 15-20 minutes.
·     Serve the hyderabadi biryani hot with mint chutney and other vegetables.

Hakka Noodles


Hakka Noodles Recipe

 

Ingredients:-
1 Hakka noodles packet
1 Capsicum finely chopped
Spring onion finely chopped
1 Carrot finely chopped lengthwise
1 finely chopped Cabbage
1 tbsp. Beans chopped lengthwise
Soya sauce, chili sauce as per your requirement.
Oil
Spring onion for garnishing.

 How to make hakka noodles:-
·         Boil water, add the hakka noodles, teaspoonful of oil, and cook the same.

·         Remove from the kadai and run under cold water. Put it in a plate

·         In another kadai, add oil. When it becomes hot add the chopped veggies and stir fry. Ensure that it does not cook much. It has to be crunchy.

·         Add soya sauce, chili sauce add the noodles and mix well.

·         Garnish with chopped spring onion serve hot.
