Dum Aloo Recipe

Ingredients:-

Baby potatoes: 1 kg
Onions 1 (well cut) and ½ (well chopped)
Sugar 1 tsp.
Cumin(jeera) Powder 1tsp.
Coriander (dhaniya) powder 1 tsp.
Bay leaf (tej patta) 1
Cloves 5-6 pieces
Cinnamon 1 small piece
Dried fenugreek leaves(kasuri methi)1 tsp.
Coriander leaves (well chopped) 1 cup
Milk ½ cup
Tomatoes 6-7 well ground
Mustard seeds 1tsp.
Garlic 5-6 pieces of garlic
Ginger 1 piece
Salt 1tbsp.
Turmeric Powder 1 tbsp.
Chili Powder  1 tbsp.(as per taste)
Refined Oil 5-6 tbsp.



How to make Dum Aloo:-


Ground Masala Preparation:-

·         Now, put the big cut onions into the grinder along with it add the ginger and garlic into the grinder. Add the cinnamon, cloves, bay leaf, kasuri methi (dried fenugreek leaves), mustard seeds ,the coriander powder and Jeera powder mixture and the milk.

·         Grind the contents for 8-10 min with 1/2 a glass of water.


Gravy Preparation:-

·         Firstly, cook the potatoes in a pressure cooker with about 4-5 glasses of water and wait for a whistle and then once cool peel the skin out.

·         Once peeled, take a knife and poke it well in 2 -3 different places so that it cooks well with the gravy.

·         Put 5-6 tbsp. of refined oil in a deep frying pan.

·         Let the oil heat for 5 min in high flame.

·         Add 1/2 tsp. of Cumin (Jeera) seeds (optional).

·         Add the chopped onion and fry the onion well for 5-7 min

·         Once the onion is fried add the ground mixture.

·         Add 1/2 tsp. of turmeric powder and 1½. tsp. of chili powder.

·         Mix and fry well for 5-7 min

·         After frying for 5 min add the potatoes and fry for 10 min

·         Add 1 tsp. of salt or as per taste. Continue to fry in full flame.

·         Add 1 tsp. of sugar and add the ground tomatoes. Add 1 tsp. of Garam Masala.

·         Let it continue to boil of 15 min

·         Add the coriander leaves. Mix well for 3 - 5 min

·         Dum Aloo is ready and tastes delicious with Roti and Chapati.
