Gujarati Daal Recipe

 

 Gujarati dishes are distinctively sweet, salty, and spicy at the same time. Gujarati Daal is also one of them which is very tempting and has different taste from rest of the daals.

 

 

 
 
 
 
 
 
 
 
 
 
 
Ingredients:-

1 cup split red gram lentil (arhar dal)
1 tsp mustard seeds (raai)
1/2 tsp cumin seeds (jeera)
2 tbsp sugar
1/2 tsp turmeric powder (haldi)
2 tsp coriander powder (dhania)
7-8 curry leaves (kadi patta)
2 cloves (laung)
1 piece cinnamon stick (dalchini)
a pinch asafoetida (hing)
1 tsp salt (namak)
2 green chilly (hari mirch)
few coriander leaves (dhania patti)
1/2 cup tamarind (imli) water
1 tbsp clarified butter (ghee)

How to make gujarati dal:-

·     Soak gram lentil in water foe 1/2 an hour.
·     Then cook with salt, turmeric in a pressure cooker.
·     Crush cloves and cinnamon sticks.
·     Finely chop green chilies and coriander leaves.
·     Heat ghee in a pan and put cumin seeds, mustard seeds and asafetida in it.
·     When mustard seeds crackle put curry leaves in it.
·     Then add green chilies and coriander powder and cook.
·     Add cloves and cinnamon stick along with boiled gram lentil.
·     After few minutes add tamarind water and sugar.
·     Simmer for 5 minutes and remove it from the flame.
·     Garnish with coriander leaves and serve.

Minestrone Soup Recipe


Minestrone Soup Recipe

 

Minestrone is a thick soup of Italian origin made with vegetables, often with the addition of pasta or rice. It is completely healthy and delicious soup.
 
 
 
 
 
 


Ingredients:-
Vegetable stock 4-5 cups
Diced Tomatoes - 1 can (or you can use blanch and chop fresh tomatoes and use them)
Onion - 1 (chopped)
Garlic - 4 cloves (minced)
Vegetables of your choice - 2 cups (carrots, potato, zucchini, celery and cabbage.)
Beans - 1/2 cup (You can use any beans)
Leafy green vegetable - 2 cups packed
Pasta - 3/4 cup
Dried Italian Herbs - 2 tsp
Red Pepper Flakes - 1/2 tsp
Salt - to taste
Oil - 2 tsp
For Garnishing
Cheese (grated)
Fresh Basil leaves or Parsley (chopped) or spring onions
 

How to make minestrone soup:-
1. Heat the oil in a heavy bottomed pot. Sauté the garlic and onions till it sweats.
2. Add the vegetable stock and bring it to a boil.
3. Add the vegetables, cooked beans and cook till the veggies are tender.
4. Add the seasoning (dried herbs), salt, red pepper flakes and the can of diced tomatoes. Boil again.
5. Now add the pasta and the greens. Cook for 15-20 minutes till the pasta is tender. Add more water if you feel the soup is thick.
6. Decorate with seasoning and serve hot.

Punjabi Pulao Recipe

 

 Rice is a fundamental food in many cultural cuisines around the world and it is also an important cereal crop.

Ingredients:-

2 cups - Basmati Rice
1 - Onions
3 tbsp - Ghee
1 - Carrots, cut into cubes
1 - Potatoes, cut into cubes
1/2 cup - Peas
1 cup - Cauliflower, cut into florets
2 tbsp - Cashew nuts
1 tbsp - Raisins
Salt To Taste
1 Pinch - Turmeric powder

Grind to Paste:
1 Inch - Ginger
5 - Garlic cloves
1 - Onions
3 - Green chilies
2 - Cinnamon sticks
3 - Cloves
1/4 cup - Mint leaves
3 - Cardamoms

 
How to make Punjab pulao:-
·     Soak rice for half an hour.
·     Heat 1 Tbsp of ghee is a pan, fry cashew nuts and raisins and keep them aside.
·     Heat the remaining ghee in thick bottomed vessel and fry the ground paste for 10 minutes. Then, add the vegetables and mix well.
·     Cook until the masala separates from oil and vegetables gets tender. Add turmeric powder.
·     Add rice, salt, and four cups of water and stir well. Cover and cook until the rice is done on slow flame. Stir once a while .
·     Just before serving take the rice in serving bowl, add the nuts and mix well.
·     Serve Punjabi pulao hot with any dal or raita.

Aloo Chana Tikki Recipe


Aloo Chana Tikki Recipe

 

Chana is extremely delicious in taste, full of nutritious and can be digested easily.
Its combination with potato (aloo) makes a amazing recipe.















Ingredients:-

6-7 Potato (Boil, Peel and Mash)
Turmeric Powder - 1/2 tbsp.
2-3 Chopped Green Chili
Garam Masala 1/2 tbsp.
Bread Crumbs - 1/2 cup 

For Filling:
Cooked Chana dal - 1 cup

Grated Ginger - 1 tbsp.
Grated Garlic - 1 tbsp.
Finely Chopped Green Chili 1-2 tbsp.
Cumin Seed Powder - 1/2 tbsp.
Finely Chopped Coriander Leaves 2-3 tbsp.
Salt as per taste
Oil for frying

 How to make aloo tikki:-
·         Mashed dal coarsely with hands.
·         In a bowl, mashed chana dal, ginger, garlic, green chili, cumin seed powder, coriander leaves and salt, mix well and keep aside.
·         In a another bowl, add potato, turmeric powder, green chili, garam masala, bread crumbs and salt, mix well and keep aside.
·         Take 1 tbsp. of potato mixture, spread on palm.
·         Place 1 tbsp. of dal mixture in center.
·         Roll as to keep dal mixture inside and potato out.
·         Press gently into rounded flattish tikki.
·         Heat the oil in a pan on medium flame, add little oil in a pan, slide the tikkis and fry it till brown and crisp from both sides.
·         Serve hot aloo channa tikki with tamarind/green chutney.
