Corn Spinach Recipe
4 dry red chilies
1 tbsp. finely chopped ginger
2 green chilies slit
600 gm tender spinach washed and finely chopped
1 tsp. sugar
salt to taste
1 cup boil corn
2 tbsp. cream
finely chopped fresh coriander to garnish (optional)
How
to make creamy spinach:-

Heat the clarified butter in a
heavy-based pan.
·
Add the whole dry red chilies and
fry till they darken.
·
Now, add the ginger, fry till it is
light brown and add the green chillies and fry briefly.
·
Add the chopped spinach,corn, sugar,
salt and mix well on high heat. Cook without covering on medium-high heat
stirring frequently for about 20 minutes or till the spinach is cooked
and dry.
·
Mix in the cream.
·
Garnish with chopped fresh coriander.
