Palak Kofta Recipe


Palak Kofta Recipe

 

 

 
 
 
 
 
 
Ingredients:-
For the koftas
1 cup palak leaves (washed and chopped)
1 cup mashed boiled potatoes
Few cashew nuts (chopped roughly)
2 tbsp. grated paneer
1 tbsp fresh coriander leaves
1/2 tsp jeera powder
1-2 green chilies (chopped)
1 piece ginger (grated)
1 tbsp Maida(flour)
salt to taste
oil for frying


For the gravy
2 bunch palak
2 onions (blanched and make a paste)
2 tomatoes (blanched and pureed)
2 tbsp cashew nut paste
1 tsp ginger garlic paste
1/2 tsp garam masala
1 tsp jeera or cumin seeds
1 tsp red chili powder
2 tsp fenugreek leaves
2 tbsp Butter
salt to taste
1/4 cup cream

 

How to make palak kofta :-

·         Take all the ingredients needed for the koftas and mix them well. Make small round balls and roll them in some cornflour. Now deep fry them on low heat till they are golden brown. Drain and keep aside.

·         Clean the spinach and boil the spinach in very little water and salt. Add a pinch of sugar to maintain the green color. Once boiled drain out the excess water and squeeze out water from the spinach and make a fine paste.

·         Heat butter in a kadai. Add the jeera and when it begins to splutter, add onion, ginger garlic paste and fry till golden brown.

·         Now add pureed tomatoes and cook till oil separates.

·         Add the palak puree and cashew nut paste and mix well. Now add salt, red chili powder, garam masala and cover cook for 3-4 minutes. Add 1/4 cup water and let it boil. Then add cream and crushed fenugreek leaves. Mix well.

·         Finally add the koftas in the gravy and let it simmer for another 2 minutes so that the koftas absorb the flavor of the gravy.

·         Dish out the koftas in a serving bowl.

·         Garnish it with some swirls of fresh beaten cream on the top.

·         Serve hot with chapatis or naan.

Cheese Paneer Cigars Recipe

 

 

Ingredients:-
4 tbsp. Grated cottage cheese (paneer)
4 tbsp. grated processed cheese
4 Spring roll sheets
2-3 Green chilies, finely chopped
½ tsp. Crushed red chilies
Salt to taste
3-4 sprigs fresh curly parsley
2 tbsp. Corn flour/ corn starch
½ cup Refined flour (maida)
Oil to deep fry
 
 
How to make cheese paneer cigars:-
 
·         Heat sufficient oil in a kadai.
·         Put cottage cheese in a bowl, add processed cheese, green   chillies, crushed red chillies, salt, parsley, cornstarch and mix well with your hands, pressing as you mix.
·         Divide into 4 equal portions and shape into long croquettes.
·         Mix refined flour with sufficient water to make a thick paste. Apply this on the spring roll sheets with a brush.
·         Place a cheese croquette at one end and roll tightly into a long cylinder and seal the open edge ensuring that you leave about ½ inch empty space at the two ends.
·         Slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
·         Halve and serve hot with any kind of ketchup.

Ingredients:-
Cauliflower - 1 (cut into florets)
Turmeric Powder - 1/2 tsp
Red Chili Powder - 2 tsp
Kitchen King masala - 1 tblsp
Ginger garlic paste - 1 tsp
Rice Flour (or corn flour) - 2 tblsp  
Oil - for deep frying
Salt - to taste 

 
How to make gobhi fry:-
·         Cut the cauliflower into florets. Put it in hot salted water for about 5 minutes.

·         Drain the florets and take it in a mixing bowl.

·         Add required salt, chili powder, and turmeric powder, ginger garlic paste, Kitchen king masala and rice flour. 

·         Mix well so that all the florets are coated well. The moisture in the florets will help the spices to stick to it.

·         Heat oil in a kadai for deep frying. Drop a few florets and deep fry till golden brown and crispy.

·         Drain the excess oil in a kitchen towel.

·         Fry the rest of the florets in batches.

·         Serve hot with tomato ketchup or schezwan sauce.
