Bhutte/ corn ka halwa

 

 The best part of corn is not just it is delicious, but rich in vitamins, minerals and fiber, thus offering several health benefits. Its sweetness and golden color makes this dessert more delicious.




 
 
 
 
Ingredients:-
1 cup semi crushed corn kernels
1 cup milk
1 cup pure ghee
1 cup khoya
1 tsp. semolina
½ cup sugar (adjust according to your choice )
Few strands of kesar (saffron) dissolved in lukewarm milk
Elaichi (Cardamom) powder


 How to make bhutte ka halwa:-

·         Heat ghee in a thick bottom pan and add the crushed corn and sauté for 5-10 minutes. 
·         Then add semolina and keep stirring till it changes the color and stops sticking to the kadhai. 
·         Add milk and keep on stirring, add khoya and mix well, cook the same till it leaves the sides of the vessel.  
·         Add sugar and mix well, when it thickens, add kesar and elaichi powder. 
·         Remove from the kadhai and garnish with chopped almonds.

Nachos with Salsa Dip

Ingredients:-

For nachos dough 

·         ½ cup wheat flour

·         ¾ cup corn flour 

·         1 tsp baking powder 

·         Salt to taste 

·         1 tsp hot oil 

·         Oil for frying 

·          For salsa sauce 

·         ¼ cup chopped tomatoes 

·         ¼ cup chopped red bell pepper 

·         ¼ cup chopped green bell pepper 

·         ¼ cup chopped yellow bell pepper 

·         2 bulbs chopped spring onion

·         2 tsp chili sauce  

·         1 tsp tomato sauce 

·         Salt to taste 

·         2 tbsp tomato puree 

·         Chopped coriander as required 

For garnish 

·         Chopped bell peppers as required 

How to make Nachos with Salsa dip:-

·         To prepare dough for nachos in a bowl add wheat flour, corn flour, baking powder, salt and sieve it. Add water and knead it into a dough. 

·         Add hot oil and mix it in the dough. 

·         Dust flour and roll out a large thin sheet out of it.

·         With the help of a pizza cutter cut the sheet into triangles. 

·         Deep fry these prepared nachos and remove them on a tissue paper. 

·         To prepare salsa sauce in a bowl add chopped tomatoes, chopped bell peppers, chopped spring onion bulbs, lemon juice, chili sauce, tomato sauce, salt, tomato puree, chopped coriander and mix well. 

·         Serve the nachos with salsa sauce. 

·         Garnish with chopped bell peppers.

Toast Fantasy Recipe

Ingredients:-
1 big sized bread slice
30 gm. Potato
25 gm. French Beans 
20 gm. Peas
20 gm. Carrot
20 gm. Cabbage  
1/4 tsp. lemon juice
1/4 tsp. Mango Powder
1/4 tsp. oil
Salt to taste

Pepper to taste

 
How to make toast fantasy:-

·     Boil potato, mash and keep aside. Boil green peas.
·     Cut French beans and carrot into very small cubes and boil together.
·     Mix all the vegetables together.
·     Add salt, pepper powder, lemon juice and mango powder.
·     Grease the baking tray with oil.
·     Place the bread on the tray and apply the vegetable mixture on it.
·     Bake on medium temp. (160 to 175degree c) until golden brown.
·     Cut the cabbage finely and sauté in ¼ tsp. oil for a few seconds.
·     Serve the toast hot with the cabbage and chutney over it.

Zafrani Pulao Recipe

 

 Zafrani Pulao is one of the Awadhi Cuisine. The richness of Awadhi cuisine lies not only in the variety of cuisine but also in the ingredients used like mutton, paneer, and rich spices including cardamom and saffron.





 
 
 
 
 
 
Ingredients:- 
Basmati Rice - 2 cup
Saffron - 1 tsp.
Nuts (Cashews, Almonds, Pistachios, Walnuts etc.) - 1 cup
Dried Fruits (Black Raisins, Golden Raisins, cranberries, pineapple, papaya etc.) - 1 cup
Fresh fruits (Pomegranate, Grapes, Apple ) - 1 cup
Whole Garam Masala - (1 bay leaf, 1 cinnamon stick, 1 cardamom, 3 cloves)
Black Cumin - 1/2 tsp.
Fried Onions - 1/2 cup
Ginger garlic paste - 1 tsp.
Coriander - handful
Mint - handful
Sugar - 1 tbsp.
Coriander- Cumin Powder - 1 tbsp.
Milk - 1/4 cup
Oil - 2 tbsp.
Ghee - 1 tbsp.

 How to make zafrani Pulao:-
·         Wash and soak the rice for at least 10 minutes.

·         Slice the onion lengthwise and fry it. Now, soak the saffron strands in the milk.

·         Heat oil in a pan and splutter the cumin seeds and whole garam masala.

·         Add the nuts and dried fruits and sauté for a minute on very low flame to prevent them from getting burnt.

·         Add the ginger garlic paste, sugar and coriander-cumin powder.

·         (After this you can cook in a rice cooker or stove top.) Add the above mixture to the rice along with required water, fried onions, half of the saffron- milk mixture and finely chopped coriander and mint leaves.

·         Let it cook till the rice is done. At this stage add the remaining saffron-milk mixture on top of the rice.

·         Add the fresh fruits and mix gently with a fork without breaking the rice.

·         Add few drops of ghee on top.

·         Garnish with additional nuts, fruits, coriander and fresh saffron strands.
