Chili Baby Corn


Chili Baby Corn Recipe

 

Ingredients:-

Main ingredients:

   12-15 baby corn

   ½ inch ginger, finely chopped

   2-3 green chilies

   3-4 garlic finely chopped

   ½ cup finely chopped spring onions

   1 small capsicum thinly sliced

   1 tsp soya sauce

    ½ tsp white vinegar (optional)

   1 tsp chopped celery

   2 tbsp water

   1 tsp corn starch/corn flour to be sprinkled from above

   salt, pepper and sugar as required

   2-3 tsp oil for frying the baby corn

   1 tbsp oil for the sauce

 

For the batter:

    2 to 3 tbsp all purpose flour/maida

    2 to 3 tbsp cornstarch/cornflour

    water as required to make a thick paste

    salt and pepper as required


How to make chili baby corn:-

Preparing the batter:

·         Make a smooth paste with the cornflour, all purpose flour (maida), salt, pepper and water.

·         rinse and dry the baby corn with kitchen towels.

·         chop the baby corn if they are larger in size or keep them whole if they are smaller.

·         heat oil on a tava or a frying pan.

·         dip each baby corn piece in the batter and coat it well with the batter.

·         pan fry the baby corn till the edges and sides are golden brown.

·         since we have used less oil, you don’t need to drain the babycorn on kitchen napkins.

 

Preparing the sauce:

·         In another pan or kadai or wok, heat about 1 tbsp oil.

·         add chopped onions or spring onions, ginger, garlic and slit green chilies.

·         stir fry on a medium flame till the onions have become translucent. (if adding capsicum, add now.stir fry till the capsicum have partly cooked but still retain their crunch.)

·         add the soya sauce and stir well.

·         now sprinkle black pepper powder, salt and sugar.

·         add 2 tbsp water and stir  ,  add the pan fried baby corn with chopped celery to this mixture and stir well.


·         to give a glaze and smoothness in the dish, sprinkle about 1 tsp of corn flour. mix well and cook for 1-2 minutes or more till the corn flour has cooked.

·         lastly add the apple cider or white vinegar and stir again.

·         check the seasonings and add salt, pepper or soya sauce if required.

·         serve the baby corn garnished with some spring onions or chopped celery.

Vegetable Samosas


Vegetable Samosas
Recipe
 

Ingredients:-
1 1/2 cup Refined wheat flour 1 1/2 cup
3 medium potatoes
1/2 cup Garden Peas
1 cup Shredded cabbage
1 cup Chopped Onion
2 tbs Chopped Green chili
11/2 tsp ginger Paste
1/4 cup mint leaves
1/2 cup coriander leaves (dhaniya)
3 tsp vegetable oil
salt as per taste 
 

How to make vegetable samosa:-

·         Boil potatoes, peel and slightly mash. Boil Peas and cabbage and keep aside.

·         In a non stick pan, heat oil and add chopped onions until light brown.

·         Add ginger paste, coriander, mint, green chilli and fry for one minute.

·         Now, add salt and the boiled Peas, cabbage and mashed potatoes and Stir well.

·         Let it cook for a minute, remove from heat and keep aside.

·         Mix flour and salt. Melt 3 tablespoons of butter and add to the flour and salt mixture and mix well.

·         Add a few tablespoons of water at a time, to the mixture and make into dough. The consistency of the dough is similar to that of chapati.

·         Divide the dough into walnut sized balls and flatten each ball to form a circle.

·         The size of each circle is roughly six inches in diameter.

·         Divide the circle into two (half circles).

·         Wet the edges of each half circle. Place sufficient amount of stuffing in the middle of the half circle and fold the corners in, so that, the end result looks like a stuffed triangle.

·         Pinch the edges lightly, they should seal easily because they are wet.

·         In a wide skillet, heat oil over medium-low. When oil is hot, deep fry the stuffed samosas until they become pale brown in colour.

·         Remove from skillet and keep aside. After frying all the samosas to a pale brown colour, re-fry them, over medium heat, once again to a deep brown colour.

Chinese Bhel


Chinese Bhel Recipe

 

Ingredients:-
250 gm wheat noodles
cooking oil to deep fry the noodles
1/4 cup grated carrot
1/4 cup cabbage sliced very fine
1/4 cup very thinly sliced capsicum
1/4 cup bean sprouts
1/4 cup chopped spring onions
2 tbsp fresh chopped coriander
1/4 cup salted, roasted peanuts
1/2 cup chinese schewan sauce
1 tsp vinegar
2 tbsp tomato ketchup
2 tsp chili sauce
Salt to taste

 How to make chinese bhel:-
·         Heat a deep pot of water till boiling. Add a tbsp of salt to it and then add the noodles. Boil till almost done and remove from the water. Drain well and lay out on a platter to cool and dry.
·         Heat the cooking oil to deep fry the noodles. Deep fry till pale golden and crispy. Remove from oil, drain and keep aside on paper towels till cool.
·         Take a large mixing bowl and crush the fried noodles in it coarsely. Add all the other ingredients and stir well.
·         Serve immediately.
